Pork Chops with Creme Fraiche and wholegrain mustard
This is honestly one of the quickest and easiest recipes I have. The Creme fraiche does make it a high fat dish, but its super tasty for a quick Sunday night throw together! I cant remember which magazine I found this in, but I have made it a few times and its great.
6 – 8 pork chops
Salt and freshly ground black pepper
50ml cake flour
30ml (2T) butter
60ml (4T) wholegrain mustard
30ml (2T) strong Dijon mustard
250ml Creme Fraiche
250g whole green beans
Juice and rind of 1 lemon
– Season the pork chops with salt and pepper and dust them with the cake flour, shaking them to remove excess flour. Heat the butter and brown the chops on both sides.
– Stir in the wholegrain mustard and dijon mustards and creme fraiche. Cover and simmer for about 15 minutes over a low heat.
– Add the green beans, lemon juice and rind and simmer for another 5 minutes or until the meat is just done.
– Season is necessary.
– Serve with baked sweet potatoes and a green salad
