Bacon, spinach and mange tout salad


This is great for braai’s or as a side to any dish. Great with chicken breasts for a healthy dinner. You can substitue the mange tout with sugar snaps if you like. I prefer sugar snaps 🙂



Juice  (1/4 Cup) and grated peel of 1 lemon

3 Tbsp (45mls) each of yoghurt and olive oil

1/4 C (60ml) grated parmesan

2 – 3 anchovies

1 clove garlic, crushed

Milled pepper



250g smoked back bacon

80g baby spinach

1 packet mange tout , sliced

125ml (1/2 C) peas, blanched

100g walnuts, toasted and chopped


– Preheat oven to 180C

– Mix dressing ingredients together, thin with a little water if necessary.

– Place bacon on baking tray and grill until crisp

– Drain and cool on kitchen paper and break into pieces

– Toss spinach, bacon, mange tout, peas and dressing together

– Scatter with walnuts and serve
