Parmesan Chicken Wraps

Parmesan Chicken Wraps pic

I came across this recipe a few years ago and have played around with  it a lot! You can do it as this recipe suggests in the lettuce leave wraps. Or you can change the recipe slightly and serve it on a bun as an interesting chicken burger. Or you can serve them with different ingredients and a side salad. This recipe is so versatile and brings a bit of excitement to boring old chicken!

This Recipe (as in the picture) 

500g chicken mince (you can buy it as mince, or make your own by putting 500g chicken fillets into a food processor and grinding it up)

1/2 C (125ml) finely sliced green beans

1 TBsp (15ml) thyme leaves

30g rocket, finely sliced

1/2 C (125ml) parmesan cheese, grated

Finely grated peel of 1 lemon

2 Tbsp (30ml) couscous

Salt and milled pepper

Garlic avocado oil or olive oil, for frying

For serving: 

2 heads butter lettuce

1/2 C (125ml) good quality mayonnaise

1/2 C mint leaves

– Mix all patty ingredients together. Season and shape into rough patties.

– Heat a little oil in a non-stick frying pan and fry patties until golden.

– Place lettuce leaves onto a large platter.

– Let everyone help themselves by placing a patty, a dollop of mayo and a few mint leaves into a lettuce leaf.

My twist on this recipe

500g chicken mince

1 Egg

30g Fresh Basil leaves, finely sliced

1/2 C (125ml) parmesan cheese, grated

1/2 C (125ml) Sun dried tomatoes in oil (Ina Paarman brand is good here) chopped up

2 Tbsp (30ml) couscous

Salt and milled pepper

Garlic avocado oil or olive oil, for frying

– Mix all patty ingredients together. Season and shape into rough patties.

– Heat a little oil in a non-stick frying pan and fry patties until golden.

– Serve with a side salad or Roast veggies – or both 🙂
