This is a decadent way of serving spinach, but it’s a favorite of mine and many others too. It’s real home food and goes so well with chicken breasts, or steak, or with any roast.
Put a packet of spinach in a pan with a little olive oil, butter a grating of nutmeg and a tiny squeeze of lemon juice. Add about 200 mls of double cream and a handful of freshly grated Parmesan cheese. Bring to a boil and serve.
