Jenny’s Cheese Muffins

My mom is all about quick and easy recipes and has amazed us over the years on how she manages to juggle so many things and bless people with the food that she makes for them. This is one of her recipes. The base is so quick and easy, you could memorise it in a second and use it when you want to whip up something quick and snacky ๐Ÿ™‚ Also great for kiddies, and perfect for lunch boxes as they freeze so well too.

You can add whatever you like into these! Great with chopped up ham or cooked bacon. Fantastic with some chives. You could even use some chopped up baby spinach and feta as a mixture. You can just see what you have in the fridge and throw it in ๐Ÿ™‚ ย I will leave that up to your imagination!

** a tip from my mom: “Use the same size cup to measure your ingredients. I find that a large coffee mug is the best. The conventional cup is too small.”

1 Cup grated cheddar cheese

1 Cup milk

1 Cup Self raising flour

pinch of salt.

Mix together and bake at 180 C for about 20 minutes.

I told you it was easy!

  1. Just a tip on this recipe. Use the same size cup to measure your ingredients. I find that a large coffee mug is the best. The conventional cup is too small. Enjoy!
